How to make Central Thai-style red curry paste easily with a blender?

For anyone who doesn’t have a curry paste recipe in the kitchen.  Well, let’s have a look.

Ingredients

5 dried chili peppers
1 teaspoon finely chopped galangal
1 tbsp thinly sliced lemongrass
1/2 teaspoon finely chopped kaffir lime skin
1 tbsp coriander root, finely chopped
2 tbsp small shallot, coarsely chopped
3 tablespoons coarsely chopped garlic
1 teaspoon shrimp paste
1/2 teaspoon ground pepper
1 teaspoon of salt

 

How to do:
1. Remove the inner seed of the chili. Roughly sliced and then soaked in water to soften.

    Squeeze out the watery part.

2. Pound the chili and salt thoroughly. Add galangal, lemongrass, kaffir lime rind, coriander root, and pepper, 

    and continue pounding until the mixture is fine.

3. Add small onions and garlic and pound until finely. Then add shrimp paste powder and mix together.

    You will get about 1/4 cup of curry paste (in the video we use a blender).
